12 medium-sized yellow squash
1 pound hamburger
1 large onion, chopped
½ to ¾ cup raw rice
¼ cup ketchup
Fresh ground salt& pepper to taste
Water
Tomato sauce
Juice of 1 lemon
Wash and brush squash. Cut at neck of squash then scoop out center. Mix hamburger with onion, rice, ketchup, salt and pepper. Add a little water. Mixture should be easy to handle. Add a little oil if meat is too lean. Stuff squash about ¾ full. Stand squash up in bottom of saucepan; add a little water and tomato sauce. Cover to cook. When it begins to cook, add lemon juice, and continue to cook over low fire for approximately 1 hour.
