Italian Cutlets

1 pound ground beef
Fresh ground salt and pepper to taste
2 tablespoons chopped parsley
Flour
2 eggs, beaten
½ cup bread crumbs
¼ cup vegetable oil
3 slices mozzarella cheese, halved
1 1-5/8 ounce package Lawry’s spaghetti sauce mix, prepared according to package directions
½ cup grated Parmesan cheese

Combine meat, salt, pepper, and parsley. Shape into 6 cutlets. Dredge culets in flour, dip in eggs, and roll in crumbs. Sauté cutlets in oil until golden brown and place in baking dish. Put mozzarella slices on top of each cutlet, cover with sauce, and sprinkle with Parmesan cheese. Bake at 400 degrees F. for 20 to 25 minutes.
