Aggieland Zucchini

5 to 6 medium zucchini, cucumber sliced
1 medium white onion, diced
2 to 3 medium tomatoes, diced
1 teaspoon garlic
1 teaspoon pepper
8 ounces mozzarella cheese, grated

Lightly brown the zucchini in a large skillet (dry, no oil) on medium heat. Add onion and brown lightly. Add tomatoes, garlic and pepper and let simmer for 10 minutes on low heat with a lid on the skillet. Pour contents of skillet into a large cooking bowl and bake at 350 degrees F. for 10 minutes. Top with cheese and return to oven for 10 more minutes. Serve hot from oven.
