We need YOUR best recipes for the ICA Cook-book. Choose from any category, from appetizers to desserts, and send one or many to the ICA Office at P.O. Box 1168, Lockhart, TX 78644-1168. You also may email recipes to the office at tica@icatexas. com, or fax them to 512-620-0610. Don’t have time to type up your recipes? Call them in to Carla or Christy at 512-620-0162. Please provide your name and phone number with the recipe. This month’s recipe comes from ICA member Laura Gayle Purcell of Bryan, with Agricultural Insurance Agency, Inc. Her mother-in-law, Mary Purcell of Marshall, MO, shared this delicious, but easy recipe. (With the holidays around the corner, doesn’t easy sound wonderful?!) Nanny’s Busy Day Cookies 1 box yellow cake mix 2 cups uncooked oatmeal 1 cup oil 1 cup sugar 2 eggs beaten 1 teaspoon vanilla 1/2 cup chocolate chips, nuts, raisins, dried fruit, or whatever you’d like to stir in! Preheat oven to 350 degrees. Mix all ingredients in a bowl, then drop rounded tablespoons of dough on a greased cookie sheet. Bake cookies for 10 minutes, or until they are done. Makes about 6 dozen cookies.
